Oysters

We feature rotating varieties of east and west-coast oysters. While every oyster has its unique qualities here are some general differences:

East Coast*
East Coast Oysters hold a much brinier and savory flavor than the West Coast oysters. Generally speaking, the East Coast Oysters have smooth shells with a teardrop shape and are generally named after the region they are grown in  MP

West Coast*
West Coast oysters have what most would describe as a "melon" or "cucumber" note accenting their mild sweet and salty presence. Notable deeper cups and ridged edges form with this species allowing a more dense oyster to grow inside  MP
